Chicken and Vegetable Fried Rice

Every once in a while, we all have that craving for Chinese take out. Unfortunately, most restaurant menus are just not very friendly for those who are gluten free. But, we here at Nommy, have come up with an absolutely delicious and quick fried rice recipe for you to try!

Every once in a while, we all have that craving for Chinese take out. Unfortunately, most restaurant menus are just not very friendly for those who are gluten free. But, we here at Nommy, have come up with an absolutely delicious and quick fried rice recipe for you to try! I'm sure you will love it just as much as we do. This recipe is pretty forgiving. Try substituting chicken thighs, chicken breast, tofu, or even sausage for the rotisserie chicken. Don't have one of the vegetables listed? Add in a different vegetable! Whether you try this recipe as is, or do some experimenting, this one is sure to become a family staple that everyone enjoys.

Chicken and Vegetable Fried Rice

Ingredients

2 cups diced rotisserie chicken

1 tablespoon butter

1.5 cups rice, cooked, cooled, and separated

1 cup frozen peas

1/2 cup frozen corn

1/2 cup frozen green beans

1/2 cup frozen diced carrots

3 cloves garlic minced

1 inch piece ginger, peeled and finely minced or shredded

2 large eggs

1 teaspoon sesame oil

1 teaspoon rice wine vinegar

2 tablespoons avocado oil

3-4 tablespoons Gluten Free Soy Sauce or Coconut Aminos

1/2 cup thinly sliced green onions

Handful of flash steamed bean sprouts

Sriracha and additional Gluten Free Soy Sauce to taste

Directions

Heat avocado oil in heavy bottomed pan with garlic and ginger.

Once garlic and ginger are golden brown, add peas, corn, green beans, and carrots. Stir fry until cooked through.

Add in eggs and stir fry along with the vegetables.

Once eggs are cooked, add rice, rice wine vinegar, sesame oil, and soy sauce.

Add 1/4 to 1/2 cup of water and stir fry on high heat for 2-3 minutes until water evaporates.

In a separate pan, pan fry diced chicken quickly in butter and add to rice.

Serve in a wide bowl topped with green onions and bean sprouts.

Add Sriracha and additional gluten free soy sauce to taste.

Notes
  1. Need this to be vegetarian? Leave out the chicken!
  2. Need this to be vegan? Leave out the chicken, butter, and eggs!
  3. Don't have rotisserie chicken? Season chicken thighs or chicken breast liberally with salt and pepper, and then pan fry in butter. Dice and add to chicken.
  4. Looking for the ideal gluten free soy sauce? We absolutely love Kikkoman's Gluten Free Soy Sauce, but Tamari or Coconut Aminos are pretty close in flavor too.
