1-1/2 lb. quartered strawberries
1 c. sugar
juice of 1/2 a lemon
1/3 c. chia seeds
Bring strawberries, sugar, and lemon juice to a boil. Simmer for 45 minutes and mash.
Stir in chia seeds and simmer for 15 minutes.
Cool and fill in a jar. Refrigerate for up to 8 days.
Makes 18 oz. or 2 1/4 c. of jam.
Great mixed in with greek yogurt, as a layer in a fruit parfait, or even on your choice of toast.
