Cheesy Broccoli Rice Casserole

3 cloves garlic
1 small white onion diced
3 tablespoons butter
3 tablespoons gluten free all purpose flour (We usually use Cup4Cup or King Arthur Measure for Measure)
2.5 cups milk
2 cups grated cheddar cheese (do not use preshredded cheese as it will not melt smoothlyy)
3 cups cooked rice
1 broccoli floret diced small
Additional butter to sauté breadcrumbs
Gluten free bread crumbs
1 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
Melt butter and sautee onion and garlic until fragrant.
Add flour and stir continuously for a few minutes. Make sure mixture does not burn and that there are no lumps.
Slowly add milk and diced broccoli and bring to a simmer while stirring continuously so that it does not burn.
Remove sauce from heat and add in 2 cups of grated cheddar cheese, stirring to melt.
Season sauce with salt and pepper.
Stir rice into sauce and pour into a greased baking dish. Top with shredded mozzarella, shredded cheddar cheese, buttered bread crumbs.
Cover and bake at 375 for 30 minutes. Uncover and broil for a couple minutes until bread crumbs are browned.
