This delicious and flavorful dish hails from Mexico and is perfect for any occasion. With its fragrant blend of herbs, spices, and leafy green spinach, this recipe is a surefire way to transport your taste buds to the heart of Mexico.
Arroz Verde (Spinach Rice) in the Instant Pot
Ingredients
1.5 cups of basmati rice
1 -3/4 cups water
4-5 large garlic cloves
1/2 a red onion
1/2 jalapeno
4 ounces fresh spinach
Half a bunch of cilantro
1 tbsp. olive oil
Salt
Pepper
Juice of 1 lime
Directions
Blend, spinach, cilantro, onion, garlic, jalapeño, and water until pureed.
Sautee 1.5 cups rinsed and drained rice in olive oil until lightly browned.
Add all ingredients except for lime. Cook on high pressure for 6 minutes and do a natural release.
Toss with juice of 1 lime and serve.
We enjoy this rice topped with extra chopped cilantro and pickled red onions.
