Hibachi Style Stir Fried Vegetables

Ingredients

2 zucchinis cut into thick wedges, about an inch long

1 red bell pepper cut into strips

1/2 pound mushrooms sliced

1 large onion cut into large slices

3 cloves garlic minced

1/2 teaspoon red chilli flakes

2 Tablespoons Gluten Free Soy Sauce

1/2 teaspoon brown sugar

1 Tablespoon Olive Oil

1 Tablespoon Butter

Directions

Melt butter and olive oil on high heat. Add chilli flakes, garlic, onion and mushrooms. Stir fry until mushrooms are golden brown. Add zucchini and stir fry for 2 minutes on high heat. Drizzle in soy sauce and serve. We like to sprinkle these vegetables with sesame seeds when serving with fried rice.

These vegetables are also delicious in a hummus wrap or as an accompaniment to a cheesy omelette for breakfast.
