Pineapple Agua Fresca

Ingredients

1 pineapple, chopped into pieces

5 cups of water

a few sprigs of mint

a sprinkling of salt

Sweeten to taste - I usually need at least 1/2 a cup of sugar. You can use agave (1/4 of a cup) or light honey.

Directions

Blend pineapple with 2 cups of water.

Strain into a large pitcher.

Add remaining water, some ice cubes, mint, sweetener and salt. Refrigerate for at least 2 hours.

Remove mint and serve over ice.
