Not all desserts have to be full of gluten, nor do they have to be full of sugar. If you need a quick and easy dessert that won't make you feel so guilty, this is our go-to! Schar gluten free puff pastry really is what makes this light and airy dessert a complete delight for anyone eating gluten free! With sweetened cream cheese, tart strawberries and a hint of vanilla inside of flaky pastry, this dessert screams summer and is a total winner!
1 sheet Schar gluten free puff pastry
4 oz. cream cheese, room temperature
1/2 cup powdered sugar
1/2 cup whipped cream
1/2 tsp. vanilla extract
1/2 lb fresh strawberries sliced
1 tsp. granulated sugar
1 tbsp. raw cane sugar crystals
1 egg
Thaw and cut puff pastry sheet into 9 rectangles.
Brush with egg beaten with a teaspoon of water. Sprinkle with cane sugar crystals.
Bake at 400 F for 15 minutes or until golden brown and puffed up beautifully. Let cool for 30 minutes.
While puff pastry is cooling, mix thawed cream cheese, powdered sugar, whipped cream and vanilla.
In a separate bowl macerate sliced strawberries with sugar and let sit for 15 minutes until juices are all syrupy.
Split cooled puff pastry rectangles down the middle, spread with cream cheese filling and top with strawberries.
