Potato Soup

Ingredients

2 cloves garlic

1 medium onion

1 stalk celery

2 tsp. butter

3 large russet potatoes

2 cups water, vegetable stock or chicken stock

1 cup heavy cream (feel free to substitute with half and half or evaporated milk for a lighter version)

salt and pepper

1 cup sour cream

3/4 cup cheddar cheese plus extra for topping

Optional:

Green Onion

Bacon, Diced and Cooked

Directions

Melt butter in a large pot.

Sautee diced garlic, onion, and celery in butter until soft.

While garlic and onion are cooking, peel and dice potatoes and add to pot.

Cover with water and cream. Bring to a boil. Simmer for 20 minutes.

Season with salt and pepper.

Use an immersion blender, and blend your soup to your desired consistency.

Stir in 3 tablespoons of sour cream and 3/4 cup cheese off the heat.

Serve topped butter, sour cream, cheese, green onion, an additional sprinkle of pepper, and homemade bacon bits.
